Pork Sirloin Steaks with Pumpkin Mash & Apple Slaw

Juicy, fennel-spiced pork sirloin steak is served with creamy pumpkin & carrot mash and a crisp slaw with bok choy and apple. Topped with a red pepper pesto aioli for a punch of flavour.
Ingredients
Pumpkin Crush
- 2 carrot, diced 1cm
- 400g diced pumpkin
To Serve
- 100g red pepper pesto aioli
Pork
- 550g free farmed pork sirloin steaks
- 1 pack smoky fennel spices
- 1 tsp oil
Apple Slaw
- 1 baby bok choy, thinly sliced
- 1 apple, grated
- 350g slaw
- 1 tsp wholegrain mustard
- 1 tsp white vinegar

Dice carrot and add to a large pot with pumpkin and a pinch of salt. Cover with tap water and cook on high heat for 15-20 minutes, until very tender. Drain well, lightly mash and season to taste with salt and pepper. Set aside, covered to keep warm.

Pat pork dry, season with salt and pepper and coat in smoky fennel spices.

Heat oil in a large frypan on medium-high heat. Cook pork for 3-4 minutes each side, until just cooked through. Rest, covered for 2-3 minutes, before slicing. Reserve any resting juices.

Thinly slice bok choy and grate apple. Combine all slaw ingredients together in a medium bowl. Season to taste with salt and pepper.

Pork with pumpkin and slaw. Top with red pepper pesto aioli and any resting juices.
