Lemony Garlic Chicken with Sesame Wedges & Crunchy Bok Choy Salad

Enjoy this family-friendly dinner of juicy, moist, tender chicken in a fresh lemon marinade. Complimented with a side of sesame potatoes and fresh bok choy slaw that's crispy, crunchy and thoroughly delicious.


Ingredients

Slaw

  • 1 baby bok choy, thinly sliced
  • 50g baby spinach, chopped
  • 2 Tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 lemon, juiced
  • 1 carrot, grated

Chicken

  • 1 garlic clove, minced
  • 1/4 lemon, zested & juiced
  • 1 Tbsp honey
  • 1/2 tsp soy sauce
  • 1 pack Lemon Pepper Spices
  • 1/4 tsp salt
  • 300g free range chicken breasts, sliced 2cm
  • 1 drizzle of oil

Wedges

  • 400g potatoes, cut into wedges
  • 1 pack sesame seeds
  • 1 drizzle of oil

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Cut potatoes into wedges. Toss with sesame seeds and oil on a lined oven tray and spread in a single layer. Season with salt and pepper and roast for about 25 minutes, until golden and tender. Turn once and swap trays halfway through cook time.
  3. Mince garlic and add to a medium bowl with lemon zest and juice, honey, soy sauce, lemon pepper spices and salt. Cut chicken into 1-2cm strips and toss through marinade to coat.
  4. Thinly slice bok choy, grate carrot and chop spinach and place in a large bowl with remaining slaw ingredients. When ready to serve, toss to combine and season to taste with salt and pepper.
  5. Heat oil in a large frypan on medium-high heat and cook chicken for about 6 minutes, stirring, until browned and cooked through.
  6. Wedges and chicken with slaw on the side.
