Crispy and tender chicken is cooked with garlic coating. Served in warm pita breads with fresh chopped salad, Parmesan and pesto for an effortless Italian tasting weeknight dinner.
Ingredients
To Serve
- 1 pack pita breads, cut in half
- 30g grated Parmesan
- 50g vegan basil pesto
Chop Salad
- 200g sliced red cabbage
- 2 tsp vinegar
- 1 baby cos lettuce, roughly chopped
- 1 carrot, grated
Chicken
- 1 pack garlic coating
- 300g free range chicken breast steaks
- 1 drizzle of oil

Heat oil in a medium frypan on high heat. Pat chicken dry and season with salt. Toss with garlic coating in a medium bowl. Cook chicken for 3-5 minutes each side (depending on thickness), or until cooked through. Thinly slice chicken just before serving.

Grate carrot and roughly chop lettuce. Add to a large bowl and toss with cabbage and vinegar. Season to taste with salt and pepper.

Cut pitas in half. Heat in microwave for 1-2 minutes, until warmed through. Alternatively, toast pitas in the toaster.

Pitas filled with chopped salad, chicken, Parmesan and basil pesto.
