Spanish Pulled Beef Wraps with Salsa Verdenaise

Ingredients

SALAD

  • ½ iceberg lettuce
  • 1 Lebanese cucumber
  • 1 avocado
  • Juice of ½ lemon (zest reserved)
  • ½ tablespoon olive oil

SPANISH PULLED BEEF

  • ½ brown onion, thinly sliced
  • 1 tablespoon Spanish spice mix
  • 250g pulled beef
  • 1½ teaspoons flour
  • ½ cup chicken or beef stock
  • ¼ teaspoon red wine vinegar
  • ¼ teaspoon Worcestershire sauce

SALSA VERDENAISE

  • 2 tablespoons mint leaves
  • 2 tablespoons parsley leaves and stalks
  • ½ clove garlic
  • Zest of ½ lemon
  • ½ teaspoon red wine vinegar
  • 2 tablespoons mayonnaise

TO SERVE

  • 6 tortilla wraps

Steps

  1. oven to 200°C.
  2. Prepare the salad. Finely slice lettuce and dice cucumber and avocado 1cm. Mix all together in a large bowl with lemon juice and olive oil. Season to taste with salt and pepper and set aside.
  3. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook onion for 2–3 minutes, until softened. Add Spanish spice mix and cook a further 1 minute, until fragrant.
  4. Reduce heat to low-medium and add pulled beef and flour. Stir well. Add stock, bring to a simmer and cook for 4–5 minutes, until thickened. Add first measure of red wine vinegar and Worcestershire sauce. Season to taste with salt and pepper, set aside and cover to keep warm.
  5. While beef is cooking, wrap tortillas in foil and place in oven for 9–10 minutes to warm through.
  6. Finely chop herbs and mince garlic. Add to a small bowl with all remaining salsa verdenaise ingredients, mix together and season to taste with salt and pepper.
  7. Place pulled beef, salad, wraps and salsa verdenaise in the middle of the table so everyone can help themselves.
