Lamb Rump Steaks with Mashed Kumara and Broccoli Apple Salad

A creamy mashed kumara is the ultimate accompaniment to the lamb rump.


Ingredients

MASHED KUMARA

  • 1 bag peeled and diced orange kumara
  • 2 tablespoons butter
  • ¼ cup milk

LAMB RUMP STEAKS

  • 550g lamb rump steaks (at room temperature)
  • 1 tablespoon lamb spice mix
  • 1 tablespoon oil

BROCCOLI APPLE SALAD

  • 1 head broccoli, cut into small florets
  • 1 apple
  • 1 Lebanese cucumber
  • 2 spring onions (optional, adults)
  • ½ cup natural yoghurt
  • 2 tablespoons mild sweet chilli sauce

Steps

  1. a full kettle to the boil. Preheat BBQ grill to high (if using).
  2. Place kumara in a medium pot and pour over boiling water until just covered. Cook for 12-15 minutes, until very soft. Drain and mash with butter and milk until smooth. Season to taste with salt and pepper. Bring another full kettle to the boil (to cook broccoli).
  3. Heat a drizzle of oil in a large fry-pan on medium-high heat. Pat lamb dry and toss with lamb spice mix, oil and season. Cook for 3–4 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside, covered to rest for 5 minutes. Slice thinly against the grain.
  4. While lamb cooks, place broccoli and a pinch of salt in a medium heat-proof bowl and cover with boiling water. Cover with a plate and leave 5–6 minutes, until bright green and tender. Drain, refresh under cold water and drain well.
  5. While broccoli cooks, prepare the rest of the salad. Remove core from apple then dice 1cm; dice cucumber 1cm; thinly slice spring onions (if using). Add all to bowl with drained broccoli.
  6. In a small bowl, combine yoghurt and sweet chilli sauce. Fold half through the broccoli and apple salad (reserve half to serve) and season to taste with salt and pepper.
  7. Divide slices of lamb rump steaks, mashed kumara and broccoli apple salad between plates. Serve remaining sweet chilli dressing on the side.
