Aztec Spiced Tofu Nachos with Guacamole

To prepare avocado. Cut avocado in half lengthways and twist halves to separate


Ingredients

AZTEC SPICED TOFU

  • 1 brown onion, finely diced
  • 1 carrot, peeled and grated
  • 1 capsicum, core and seeds removed and finely diced
  • 1 tablespoon Aztec spice mix
  • ½ teaspoon salt
  • 275g firm tofu
  • 3 tablespoons chipotle sauce
  • 1 teaspoon soy sauce
  • 2 tablespoons water
  • Juice of ½ lemon

GUACAMOLE

  • 1 avocado
  • Juice of ½ lemon
  • ½ chilli, seeds removed and finely diced
  • 1 tablespoon coriander leaves and stalks, finely chopped

TO SERVE

  • 1 tablespoon coriander leaves
  • ½ iceberg lettuce
  • 1 tomato
  • 1 pack corn chips
  • ½ cup sour cream

Steps

  1. Heat a drizzle of oil in a large fry-pan on medium heat. Cook onion, carrot and capsicum for 6–7 minutes, stirring occasionally, until vegetables are soft (add a splash of water if vegetables start to stick).
  2. While onion cooks, prepare guacamole. In a small bowl, mash all guacamole ingredients together with a fork. Season to taste with salt and pepper. Set aside.
  3. Add Aztec spice mix and salt to fry-pan with onion and carrot mix. Cook, stirring, for about 30 seconds, until fragrant. Pat tofu dry with paper towels and finely crumble. Add to pan and cook for 2–3 minutes, until tofu is warmed through.
  4. In a small bowl, mix together chipotle sauce, soy sauce and water. Add to tofu, stir and cook for about 1 minute, until warmed through. Remove from heat. Add lemon juice and season to taste with salt and pepper.
  5. While tofu cooks, prepare the rest of the meal. Roughly chop second measure of coriander; thinly slice lettuce; dice tomato 1cm. Place all on a serving platter. Pour corn chips into a medium bowl and sour cream into a small bowl.
  6. Place everything on the table for everyone to help themselves.
