20-Minute Creamy Red Pepper Pesto & Bacon Pasta with Broccoli & Parmesan

Here's quick and easy but delicious pasta recipe! This dish comes together in just 20 minutes, is tossed with an insanely delicious red pepper pesto and sour cream sauce and finished off with Parmesan.


Ingredients

Sauce

  • 150g red pepper pesto
  • 250g lite sour cream
  • 150g baby spinach
  • 2 can whole-peeled tomatoes
  • 1 drizzle of oil
  • 400g bacon, thinly sliced
  • 1 pack classic spice blend

Pasta

  • 1 pack spaghetti
  • 1 broccoli, cut into florets & stalk diced
  • 1 drizzle of oil

To Serve

  • 70g grated Parmesan

Steps

  1. Bring a full kettle to the boil.
  2. Tip boiling water into a large pot, add a pinch of salt and bring back to a rapid boil with a lid on. As soon as water is back to the boil, cook pasta for 8-10 minutes until just tender. Cut broccoli into florets and dice stalk. Add to pot with pasta for the final 3 minutes of cooking time. Drain and return to pot with olive oil to prevent sticking.
  3. Heat oil in a large frypan on high heat and thinly slice bacon. Cook bacon for 5-6 minutes, until browned. Add classic spice blend and canned tomatoes to pan and bring to a simmer. Cook for a further 3 minutes, until sauce is thickened.
  4. Remove pan from heat and stir through spinach, sour cream and red pepper pesto. Season to taste with salt and pepper.
  5. Spaghetti and broccoli topped with pasta sauce and Parmesan.
