Kung Pao Peanut Noodle Bowl with Crispy Fried Eggs

This recipe is our tasty take on the classic Chinese dan dan noodles. The addition of peanut butter makes the sauce extra savoury and creamy and is then tossed with bright greens and silky noodles for an irresistible combo. Topped off with a crispy fried egg, fresh mung bean sprouts and sesame seeds.


Ingredients

Eggs

  • 1 pack eggs (6 pack)
  • 1 drizzle of oil

To Serve

  • 1 pack sesame seeds
  • 150g mung bean sprouts

Noodles

  • 1 drizzle of oil
  • 600g fresh egg noodles

Sauce

  • 3 Tbsp water
  • 3 Tbsp sweet chilli sauce
  • 120g peanut butter
  • 300g kung pao sauce

Veggies

  • 2 broccoli, cut into florets & stalk diced
  • 1 drizzle of oil
  • 1 carrot, cut in half lengthways & thinly sliced
  • 1 twin pack baby bok choy, leaves separated

Steps

  1. Bring a large pot of salted water to the boil.
  2. Cut broccoli into florets and dice stalk, separate bok choy leaves and thinly slice carrot. In a small bowl, combine all sauce ingredients and mix well. Set aside separately.
  3. Use hands to separate noodles. Place in pot of boiling water, stir to separate strands and cook for 3 minutes. Drain, refresh under cold water and drain again. Return to pot and toss with oil to prevent sticking.
  4. Heat oil in a large frypan on medium-high heat. Crack eggs into pan, season with salt and cook for about 2 minutes, until golden and crispy underneath. Cover pan with a lid and cook for a further 1-2 minutes, or until eggs are cooked to your liking. Set aside and reserve pan.
  5. Return reserved pan to medium-high heat with oil. Cook carrot for 3 minutes. Add broccoli and cook for a further 3 minutes, until starting to soften. Add bok choy with a splash of water and cook for about 2-3 minutes. Add sauce mixture to pan and stir to combine. Bring to a simmer, add cooked noodles and remove from heat. Toss to combine and season to taste with soy sauce.
  6. Noodles topped with eggs, mung bean sprouts and sesame seeds.
