Crispy. Savoury. Satisfying. These Montreal-spiced chicken drumsticks are a mouth-watering treat with garlic bread and creamy slaw, perfect for a family meal.
Ingredients
Chicken
- 1800g free range chicken drumsticks
- 1 pack Montreal spices
- 1 drizzle of oil
Coleslaw
- 1 Tbsp vinegar
- 2 Tbsp mayonnaise
- 250g lite sour cream
- 500g slaw
- 500g frozen corn
- 1 drizzle of oil
Garlic Bread
- 1 Vienna loaf
- 2 garlic clove, minced
- 4 Tbsp butter, softened

Preheat oven to 230°C (or 210°C fan bake).

Pat chicken dry and season with salt and pepper. Toss chicken with Montreal spices and oil on a lined baking tray. Bake on upper oven rack for about 30-35 minutes, until golden and cooked through. Turn once halfway through cook time.

Place butter in a small bowl and soften in the microwave for 10-15 seconds. Mince garlic, add to butter and mix to combine. Slice loaf in 2cm intervals, leaving a hinge at the bottom. Spread each slice with butter, wrap loaf in foil and place on an oven tray. Bake on lower oven rack for 15 minutes, until warm.

Heat oil in a large frypan on medium-high heat. Cook corn with a pinch of salt for about 8 minutes, until beginning to char.

In a large bowl, toss corn with remaining coleslaw ingredients. Season to taste with salt and pepper.
