Very Teriyaki Fish with Sesame Honey Stir-Fry

You could pop the remaining very teriyaki sauce in the microwave for 20 seconds to gently warm it. Keep fish plain for less adventurous kiddies.
Ingredients
BASMATI RICE
- 1½ cups basmati rice
- 2¼ cups water
- Pinch of salt
SESAME HONEY STIR-FRY
- 1 carrot
- 1 head broccoli
- 1/2 cabbage
- 2 teaspoon sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon runny honey
- 2 tablespoons water
- 1 tablespoon oil
VERY TERIYAKI FISH
- 450g fish fillets
- 50g very teriyaki sauce

oven to 220°C. Line an oven tray with baking paper.

Combine all rice ingredients in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid at any time during cooking.

Prepare vegetables. Peel carrots, cut in half lengthways then slice thinly on an angle; chop broccoli into very small florets; finely slice cabbage until you have about 3 cups worth. In a small bowl combine sesame oil, soy sauce, honey and water and set aside.

Pat fish dry with paper towels and remove any remaining scales or bones. Cut any larger fillets in half, place on prepared tray and season with salt. Evenly spread very teriyaki sauce over fish then bake for 5–7 minutes, until just cooked through. Reserve any remaining sauce.

While fish is cooking, heat oil in a large fry-pan/wok on high heat. Stir-fry carrots and broccoli for about 3 minutes, until starting to colour.

Add cabbage and sesame/soy mixture and stir-fry a further 2–3 minutes, until cabbage is wilted and broccoli is tender. Season to taste with salt.

Place ¾ cup cooked basmati rice onto each plate. Top with sesame honey stir-fry and very teriyaki fish. Drizzle over any remaining very teriyaki sauce.
