
Beef Chilli Con Carne with Rice & Sour Cream

Nothing beats a cozy bowl of chilli over rice to spice up your dinner time. Enjoy a fun fiesta of flavours with our take on a classic chilli con carne! Seasoned with our inhouse blend of spices paired with savoury beef mince - you just might ask for thirds.
Ingredients
Chilli
- 1/2 brown onion, diced
- 1 carrot, grated
- 1/2 can kidney beans, drained & rinsed
- 1 drizzle of oil
- 300g beef mince
- 1/2 tsp salt
- 1/2 pack chilli con carne spices
- 1 can crushed tomatoes
- 1/2 cup water
- 50g baby spinach
To serve
- 1 tomato, diced
- 1 bunch coriander, leaves picked
- 2 Tbsp lite sour cream
- 1 Tbsp sweet chilli sauce
- 1 pinch of chilli flakes, optional
Rice
- 150g jasmine rice
- 1 1/8 cup boiling water

Bring a half-full kettle to the boil.

Combine rice, boiling water measure and a pinch of salt in a small pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.

Dice onion and grate carrot. Drain and rinse kidney beans. Heat oil in a large pot on high heat. Cook onion, carrot and beef for about 5 minutes, until browned. Add salt and 1/2 pack chilli con carne spices and cook a further 1 minute, until fragrant.

Add beans, canned tomatoes and water measure to pot and bring to a gentle simmer. Simmer for 5-6 minutes, until sauce has thickened. Stir through baby spinach and season to taste with salt and pepper.

Dice tomato and pick coriander leaves.

Rice and chilli topped with sour cream, sweet chilli sauce, tomato, chilli flakes (if using) and coriander.
