Parmesan Chicken Traybake with Roasties & Smoked Garlic Aioli

It's time to pull the baking trays out! We've got a Parmesan traybake recipe that's big on flavours but light on the washing up. Juicy chicken drums, cheesy potatoes, golden roasties, served with smoked garlic aioli, this a finger-licking meal the whole family will love!


Ingredients

Traybake

  • 50g grated Parmesan
  • 400g potatoes, diced 2cm
  • 550g free range chicken drumsticks
  • 1 pack paprika spices
  • 1 drizzle of oil
  • 1 broccoli, cut into small florets
  • 1 carrot, cut in half lengthways & sliced 1cm
  • 1 red onion, cut into quarters

To Serve

  • 2 Tbsp tomato sauce
  • 50g smoked garlic aioli

Steps

  1. Preheat oven to 230°C (or 210°C fan bake).
  2. Dice potatoes 2cm and place on lined oven tray. Pat chicken dry and add to tray with potatoes. Toss with 1/2 pack of paprika spices, oil and season with salt and pepper. Place on upper rack and bake for about 25 minutes, until browned and cooked through.
  3. Cut broccoli into florets (see tip) and cut carrot in half lengthways and thinly slice. Cut onion into quarters and place all vegetables on a second lined oven tray. Toss with remaining paprika spices and oil. Season with salt and pepper and bake on lower rack for about 20 minutes, until golden and tender.
  4. Remove trays from oven and switch oven to high grill. Sprinkle Parmesan over potatoes and chicken. Grill for 3 minutes, until browned. Keep roasted veggie tray warm while chicken and potatoes are grilling.
  5. Chicken traybake with smoked garlic aioli and tomato sauce (see tip).
