Butcher's Pulled Beef Pie with Buttered Peas

Here's a warm and hearty pulled beef pie but without all the slow cooking and hard work. In this recipe, we’re using tender pre-pulled beef from our friends at Magills. The pulled beef is cooked in a rich sauce loaded with winter veggies, all tucked under a flaky layer of puff pastry and baked till golden perfection.
Ingredients
Peas
- 2 Tbsp butter
- 500g frozen peas
Pie
- 1 pack vegan flaky puff pastry
- 2 parsnip, diced 1cm
- 3 carrot, grated
- 1 brown onion, thinly sliced
- 3 Tbsp butter
- 1 pack butcher's spices
- 3 cup milk
- 600g pulled beef
- 1 1/2 Tbsp Dijon mustard, optional

Preheat oven to 220°C (or 200°C fan bake). If you don’t have an oven-proof frypan, set aside a large baking dish.

Dice parsnip, grate carrot, and thinly slice onion. Heat oil in a large ovenproof frypan on medium-high heat (see tip). Cook onion, parsnip and carrot for about 6 minutes, until starting to soften. Add butter and butcher's spices and cook for about 2 minutes, until butter is melted. Gradually add milk, stirring constantly until smooth and thickened.

Add beef and mustard (if using) to pan, breaking up meat with a wooden spoon. Cook for about 3 minutes, stirring occasionally. Add a little more milk if you would like a thinner sauce and season to taste with salt and pepper.

Transfer filling to baking dish (if using). Unroll pastry onto a flat surface and lightly score with a sharp knife. Place on top of filling and bake for 15-20 minutes, until pastry is puffed and golden.

While pie is baking, bring a medium pot of salted water to the boil. Cook peas for about 3 minutes, until tender. Drain and return to pot. Stir through butter and season to taste with salt and pepper.
