15-Minute Creamy Bacon Alfredo with Fresh Fettuccine & Balsamic Onions

This creamy, comforting pasta dish is easy to make and loaded with savoury flavours. Fresh fettuccine is tossed with an easy Alfredo pasta sauce, veg and bacon. Topped with Parmesan cheese and caramelised balsamic onions - ready in only 15 minutes!
Ingredients
Pasta
- 200g fresh fettuccine
- 1/2 broccoli, roughly chopped
- 1 drizzle of olive oil
Sauce
- 1 drizzle of oil
- 50g baby spinach
- 200g Parmesan pasta sauce
- 150g frozen peas
- 125g bacon, thinly sliced
To Serve
- 50g balsamic onions
- 30g grated Parmesan

Bring a half full medium pot of hot salted water to a boil on high heat with a lid on.

Heat oil in a medium frypan on high heat and thinly slice bacon. Cook bacon for 5-6 minutes, until cooked through and lightly browned. Add and peas and cook for a further 2-3 minutes, until tender.

Roughly chop broccoli.

Separate pasta so it is not stuck together. Add pasta and broccoli to pot of boiling water, stir well to avoid pasta sticking and return lid to pot. Cook for about 3 minutes, until just tender. Reserve 1/2 cup pasta water and then drain. Return pasta and broccoli to pot with olive oil to prevent sticking.

Remove the pan with bacon from heat and stir through sauce, spinach and 1/4 cup reserved pasta water. Add pasta and broccoli to pan with sauce. Toss to combine and season to taste with salt and pepper. If sauce is too thick, add remaining reserved pasta water.
