Southern Pork Sirloin Steaks with Quinoa & Jalapeno Creme

These delicious pork steaks are perfectly seasoned in smoky fennel spices to be the star of an easy weeknight meal! Served up with red quinoa and smoky jalapeno creme!
Ingredients
Pork
- 1 tsp oil
- 1 pack smoky fennel spices
- 550g free farmed pork sirloin steaks
To Serve
- 4 Tbsp smoked jalapeño crème
- 50g feta cheese, crumbled
Quinoa
- 2 Tbsp white wine vinegar
- 100g baby spinach
- 2 tomato, diced 2cm
- 1 telegraph cucumber, diced 2cm
- 150g frozen corn
- 100g quinoa
Steps

Bring a large pot of salted water to the boil.

Add quinoa to pot of boiling water and cook for about 15 minutes. After 15 minutes, add corn and cook for 2 more minutes, until quinoa and corn are tender. Drain well.

Pat pork dry and season with salt. Coat in smoky fennel spices. Heat oil in a large fry-pan on medium heat. Cook pork for 3-4 minutes each side, or until just cooked through.

Dice cucumber and tomatoes. Combine in a large bowl with cooked quinoa and corn, baby spinach and vinegar. Season to taste with salt and pepper. Crumble feta and set aside for serving.
