
Sticky Hoisin Pork Meatballs with Coconut Rice & Peanuts

Pork meatballs are a crowd-pleasing winner, and this recipe is a game changer thanks to the special combination of sweet and savoury flavours from the sticky hoisin sauce. Paired with a fragrant coconut rice and chopped peanuts for the perfect finish!
Ingredients
Coconut Rice
- 300g jasmine rice
- 1 1/2 cup water
- 200ml coconut milk
Pork
- 1 carrot, grated
- 600g free farmed pork mince
- 50g breadcrumbs
- 1 egg
- 1/2 tsp salt
Hoisin Sauce
- 200g hoisin sauce
- 2 tsp vinegar
- 2 tsp sesame oil
- 2 Tbsp water
- 1 pack chopped peanuts
Veggies
- 1 broccoli, cut into small florets
- 1/2 cauliflower, cut into small florets

Preheat oven to 220⁰C (or 200⁰C fan bake). Bring a large pot of salted water to the boil. Set aside a medium baking dish (about 20 x 25cm).

Combine rice, coconut milk and water measure in a medium pot and bring to the boil. Once boiling, stir and cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 8 minutes. Do not lift lid during cooking. Once cooked, fluff up grains with a fork and season to taste with salt and pepper.

Grate carrot and add to a medium bowl with remaining pork ingredients. Mix until well combined. Use a heaped tablespoon to scoop out mixture and roll into balls. Place meatballs into baking dish.

In a small bowl, mix hoisin sauce, vinegar, sesame oil, water measure and peanuts together. Spoon sauce over meatballs and gently shake to distribute. Bake meatballs for about 20 minutes, until just cooked through.

Cut broccoli and cauliflower into small florets. Add all to pot of boiling water and cook for about 5 minutes, until tender. Drain, return to pot and season to taste with salt and pepper.
