Cheesy Spinach & Corn Quiche with Radish Salad

This cheese-tastic quiche is packed with fresh spinach and a deliciously hearty egg filling served with a tasty radish and almond salad.
Ingredients
Salad
- 2 tsp red wine vinegar
- 2 Tbsp olive oil
- 1 pack sliced almonds
- 2 radish, thinly sliced
- 1 lettuce, chopped
Quiche
- 1 brown onion, finely diced
- 250g XX frozen corn XX
- 125g sour cream
- 3/4 cup milk
- 1 pack eggs (6 pack)
- 1 tsp salt
- 1 1/2 tsp baking powder
- 3/4 cup flour
- 90g Colby cheese, grated
- 100g baby spinach, chopped
Steps

Preheat oven to 200°C (or 180°C fan bake). Grease a medium baking dish.

Finely dice onion, chop spinach and grate cheese and set aside.

In a large bowl, whisk together flour, baking powder and salt. Season with pepper. Add eggs, milk and sour cream and whisk thoroughly to combine. Add onion, spinach and corn and mix, until combined.

Transfer mixture to baking dish, top with cheese and bake for about 35 minutes, until golden and cooked through.

Chop lettuce and thinly slice radish. Just before serving, toss all salad ingredients together in a large bowl. Season to taste with salt and pepper.
