Creamy Pulled Beef Stroganoff with Mash

Pulled beef and mushroom stroganoff is the ultimate dinner solution. Tender beef and mushrooms cooked in a rich savoury sauce served over mashed potato - the perfect vessel for absorbing all the delicious sauce.


Ingredients

Stroganoff

  • 1/4 cup lite sour cream
  • 150g frozen peas
  • 1 tsp Dijon mustard
  • 3/4 cup beef stock
  • 200g pulled beef
  • 1 pack Stroganoff Spices
  • 1 drizzle of oil
  • 200g mushrooms, thinly sliced
  • 1 carrot, cut in half lengthways & thinly sliced
  • 1/2 brown onion, finely diced

Mash

  • 1 Tbsp butter
  • 2 Tbsp milk
  • 400g potatoes, diced 3cm

Steps

  1. Bring a medium pot of salted water to the boil.
  2. Finely dice onion, thinly slice carrot and mushrooms and set aside.
  3. Dice potatoes and cook in pot of boiling water for 15-20 minutes, until very tender. Drain and return to pot with milk and butter. Mash until smooth and season to taste with salt and pepper.
  4. Heat oil in a medium fry-pan on high heat. Cook onion, carrot and mushrooms for about 5 minutes, until browned. Reduce heat to medium, add stroganoff spices and cook for a further 1 minute, stirring, until fragrant.
  5. Add beef, stock, mustard and peas to pan, bring to a simmer and cook for about 3 minutes, until sauce has thickened and beef is hot through. Stir through sour cream and season to taste with salt and pepper.
  6. Mash topped with beef stroganoff.
