15-Minute Bacon Fettucine with Sicilian Pesto and Parmesan

The easiest 15 minutes of your day. This comforting classic has had our superquick makeover - with tasty Sicilian pesto and plenty of vege. Your house will smell terrific while this one cooks!


Ingredients

Pasta Sauce

  • 1 drizzle of olive oil
  • 125g bacon, thinly sliced
  • 1 capsicum, thinly sliced
  • 50g sicilian pesto
  • 1 can cherry tomatoes
  • 50g baby spinach

Pasta

  • 200g fresh fettuccine

To Serve

  • 50g grated Parmesan

Steps

  1. Bring a half-full medium pot of hot salted water to the boil with a lid on.
  2. Heat olive oil in a large fry-pan on high heat. Thinly slice bacon and capsicum. Cook bacon and capsicum for 5-6 minutes until starting to brown. Add Sicilian pesto and canned tomatoes and bring to a simmer. Cook a further 3-4 minutes, until slightly reduced and hot through.
  3. Separate pasta so it is not stuck together. Cook pasta in pot of boiling water for 2-3 minutes, until just tender. Reserve 1/2 cup of pasta water and drain.
  4. Add pasta to pan with sauce, spinach and 1/4 cup reserved pasta water. Toss to combine and season to taste with salt and pepper. If sauce is too thick, add remaining reserved pasta water.
  5. Pasta topped with Parmesan.
