15-Minute Southern-Spiced Chicken with Smoked Jalapeño Creme

This simple dish gets a sophisticated lift from a flavorful smoked jalapeno creme which lends a smoky chilli zing to the seared chicken breast. It’s perfectly accompanied by a hearty side of veggie packed precooked rice, salsa roja and cucumber!


Ingredients

Rice

  • 1/2 pack baby spinach
  • 1/4 pack southern blend
  • 1/4 pack pre-cooked brown rice
  • 1/3 cup frozen corn
  • 1/4 tsp oil

To Serve

  • 1 Tbsp smoked jalapeño crème
  • 1 Tbsp salsa roja
  • 1/2 Lebanese cucumber, diced 1cm

Chicken

  • 1/4 pack southern blend
  • 140g free range chicken breast
  • 1/4 tsp oil

Steps

  1. Heat oil in a medium fry-pan on medium-high heat. Pat chicken dry, season with salt and coat in first measure of Southern blend. Cook in pan for 3-5 minutes reach side, or until cooked through. Remove from pan, rest covered and keep pan on heat.
  2. Add oil to pan. Add corn, rice and second measure of Southern blend and stir-fry for about 3 minutes, until hot. Remove from heat, season with salt and stir through spinach to wilt.
  3. Dice cucumber. Thinly slice chicken.
  4. Rice and chicken with any resting juices. Top with salsa roja, jalapeño crème and cucumber.
