Sizzlin' Chicken Fajitas with Warm Tortillas & Sour Cream

Full of flavour and absolutely delicious – this recipe will be a sure hit with the fam or if you just want to add a little spice to your life! Tickle your taste buds with juicy chicken fajitas and soak up the flavour with warm flour tortillas!


Ingredients

To Serve

  • 3 Tbsp sweet chilli sauce
  • 125g lite sour cream
  • 100g baby spinach
  • 1 pack tortillas
  • 1 carrot, grated
  • 1 pack sunflower & pumpkin seeds

Chicken

  • 1 drizzle of oil
  • 1 pinch of chilli flakes, optional
  • 600g free range chicken breasts, sliced 1cm
  • 1/2 pack smoky Mexican spices

Veggies

  • 1 capsicum, sliced
  • 1 drizzle of oil
  • 1 pinch of chilli flakes, optional
  • 1/2 pack smoky Mexican spices
  • 250g frozen corn
  • 1 can kidney beans, drained & rinsed

Steps

  1. Preheat oven to 200°C (or 180°C fan bake), if using to warm tortillas.
  2. Slice capsicum, drain & rinse beans. Toss together with corn, first measure of Mexican spices, chilli flakes (if using) and oil. Season with salt and pepper. Grate carrot and set aside separately.
  3. Wrap tortillas in foil and heat in oven for about 12-15 minutes, until warmed through. Alternatively, wrap stack of tortillas in a damp tea towel and heat in microwave for 1-2 minutes until warm.
  4. Pat chicken dry and slice. Toss with second measure of Mexican spices and chilli flakes (if using). Season with salt and pepper. Heat oil in a large fry-pan on medium-high heat and cook chicken for 8-10 minutes, until cooked through. Transfer to a serving dish, covered. Wipe and reserve pan.
  5. Heat oil in reserved-pan on medium-high heat and cook veggies and beans for about 5 minutes, until tender. Transfer to dish with chicken and set aside, covered.
  6. Tortillas filled with carrot, spinach, veggies, chicken, sour cream, sweet chilli sauce and seeds.
