15-Minute Pulled Beef Burrito Bowl with Chipotle & Sour Cream

We've giving you a head start with this dish, by using slow cooked and pre-pulled beef. All you have to do is cook it with delicious tomatoes and a dash of chipotle sauce. Complete your burrito bowl with fresh, crunchy salad and fragrant coriander.


Ingredients

Beef

  • 1/2 tsp oil
  • 1/3 cup frozen corn
  • 100g pulled beef
  • 1/4 pack chipotle sauce
  • 1/4 can cherry tomatoes
  • 1/2 pack grated mozzarella cheese

To Serve

  • 1/2 baby cos lettuce, sliced 3cm
  • 1/2 tomato, diced
  • 1 Tbsp lite sour cream
  • 1/4 pack pre-cooked brown rice

Steps

  1. Heat oil in a small fry-pan on medium-high heat. Add corn, beef, chipotle sauce and canned tomatoes and bring to a simmer. Reduce heat to medium and simmer for about 3 minutes, until thickened. Season to taste with salt and pepper, top with cheese and place a lid on the pan. Cook for 2 minutes, until cheese has melted. Remove from heat.
  2. Squeeze rice in pack to separate grains. Tear top and microwave in pack for 2 minutes.
  3. Slice lettuce and dice tomato.
  4. Rice topped with beef, lettuce, tomato and sour cream.
