Cheesy Chicken Lasagne with Hidden Veg

Here’s a treat for lasagne lovers - a seriously tasty chicken version full of great flavours and bursting with layers of tomato sauce with hidden veggies. Layered between silky lasagne sheets and smothered in a creamy white sauce, this is a new twist on the classic that will keep you coming back for more!
Ingredients
Filling
- 1 brown onion, finely diced
- 1 carrot, grated
- 300g free range chicken breasts, diced 1cm
- 1 drizzle of oil
- 1 pack Tuscan Spices
- 1/4 tsp salt
- 25g tomato paste
- 1 can crushed tomatoes
- 1/2 cup chicken stock
- 50g baby spinach
Lasagne
- 1/2 pack lasagne sheets
- 50g grated Parmesan
White Sauce
- 2 Tbsp butter
- 2 Tbsp plain flour
- 1/4 tsp salt
- 2 cup milk

Preheat oven to 200°C (or 180°C fan bake). Set aside a small baking dish.

Dice onion and grate carrot. Pat chicken dry, dice and season with salt and pepper. Heat oil in a medium fry-pan on high heat and cook onion and carrot for about 3 minutes, until softened. Add Tuscan spices and chicken and cook for about 4 minutes, until chicken is white all over.

Add salt, tomato paste, canned tomatoes and stock, bring to a simmer and cook for 6-7 minutes, until slightly thickened and reduced. Stir through spinach and season to taste with pepper.

Melt butter in a small pot on medium heat. Add flour and salt and cook, stirring constantly for 1-2 minutes. Whisk in milk, 1/2 cup at a time, until smooth. Bring to a gentle simmer and cook for 1-2 minutes until slightly thickened. Season to taste with pepper.

Spoon half the tomato sauce filling into the baking dish and spread out evenly. Top with half the lasagne sheets and repeat with remaining filling and lasagne sheets. Pour over white sauce and sprinkle with Parmesan.

Bake lasagne for 25-30 minutes, until pasta is tender and cheese is golden brown. Allow to sit for 5 minutes, before serving.
