BBQ Bacon and Mango Pizzas with Salad

The mouth-watering mango BBQ sauce is the star of this dish!


Ingredients

BBQ BACON AND MANGO PIZZAS

  • 2 wholemeal pizza bases
  • 4 tablespoons mango BBQ sauce
  • 2 cups Colby cheese, grated
  • 300g bacon mince
  • ½ red onion, thinly sliced * (optional, adults)
  • 1 mango, diced 1cm
  • 50g cream cheese

SALAD

  • ¼ teaspoon mustard (e.g. Dijon, wholegrain)
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • 1 cos lettuce
  • ½ telegraph cucumber
  • 1 carrot

TO SERVE

  • Remaining mango BBQ sauce (optional)

Steps

  1. Oven to 220°C. Preheat 2 oven trays or pizza stones.
  2. Lay two sheets of baking paper on bench and place a pizza base on top of each. Evenly spread 2 tablespoons of mango BBQ sauce over each base. Sprinkle grated cheese evenly between bases.
  3. Evenly crumble over bacon mince. Scatter over first measure of red onion and diced mango pieces. Using a ½ teaspoon measure, scoop out cream cheese and evenly place over pizzas. Season with pepper.
  4. Carefully lift baking paper (with bases) onto preheated oven trays or pizza stones and bake for 12¬–14 minutes, until cheese is melted and pizza bases are golden and crispy. Swap trays halfway to ensure even cooking.
  5. While pizza is cooking, whisk mustard, vinegar and a drizzle of extra-virgin olive oil together in a large bowl.
  6. Finely slice cos lettuce; dice cucumber 1cm; peel and grate carrot. Add all to bowl with dressing, season with salt and pepper and toss to combine.
  7. Slice BBQ bacon and mango pizzas into 6–8 squares and divide between plates. Drizzle or dollop over remaining mango BBQ sauce (if using). Serve salad on the side.
