Best Ever Pork Sausie Rolls with Walnut Salad

These pork sausie rolls with a fresh walnut salad are the perfect comfort food that cannot be passed up! This recipe is easy to prepare using all butter puff pastry and a delicious pork grind from our friends at L'authentique.
Ingredients

- 2 Tbsp tomato sauce
Vinaigrette
- 1 pack chopped walnuts
- 1/2 Tbsp balsamic vinegar
- 2 Tbsp extra-virgin olive oil
- 1/2 Tbsp wholegrain mustard
Sausage Rolls
- 1 brown onion, finely diced
- 1 apples, grated
- 1 drizzle of oil
- 1/2 tsp salt
- 500g classic pork grind
- 50g breadcrumbs
- 375g flaky puff pastry, cut in half lengthways
- 1 Tbsp milk
- 1 carrot, grated
Salad
- 1 telegraph cucumber, diced 1cm
- 1 tomato, diced 1cm
- 1 baby cos lettuce, roughly chopped

Preheat oven to 220°C (or 200°C fan bake).

Dice onion and grate carrot and apple. Heat oil in large fry-pan on medium-high heat. Cook onion and carrot with salt for 3-4 minutes, until starting to soften. Add to a large bowl with apple, pork and breadcrumbs. Mix well and reserve pan.

Cut pastry in half lengthways. Divide filling into two and shape into long sausages along centre of the pastry. Roll up pastry to form two long sausage rolls. Cut each roll into 6 even sized pieces and place on a lined oven tray, seam side down.

Brush milk over sausage rolls. Bake for 18-22 minutes, or until pastry is puffed and golden and pork is cooked through.

Heat a large, dry fry-pan on medium heat. Toast walnuts, stirring often for 2-3 minutes, until golden and fragrant. Transfer to a medium bowl and reserve pan. Add remaining vinaigrette ingredients to bowl, whisk and season to taste with salt and pepper. Set aside for serving.

Chop lettuce and dice cucumber and tomato. Set aside in a large bowl. Just before, serving toss with vinaigrette.
