Southern Tofu Bites with Creamy Ranch Slaw

Tofu fans, rejoice! Now you can enjoy Southern hospitality with our Southern Baked Tofu Bites. Paired with a creamy ranch slaw, it's so good even the meat eaters will want to try it.
Ingredients
To Serve
- 1 bunch coriander, leaves picked
- 1 lime, cut into wedges
- 50g ranch dressing
Slaw
- 350g slaw
- 100g baby spinach
- 50g ranch dressing
Corn
- 4 corn cob, cut in half
- 1 tsp olive oil
- 1/2 tsp garlic chilli blend
Tofu
- 600g tofu, diced 2cm
- 1 Tbsp cornflour
- 1 pack southern blend
- 2 tsp oil

Preheat oven to 230°C (or 210°C fan bake).

Pat tofu dry, dice and toss in a large bowl with cornflour, Southern blend and a pinch of salt. Spread on a lined oven tray and drizzle over oil. Bake in oven for about 20 minutes, until golden brown and crispy.

Remove husks from corn and cut in half. Place in a large pot and cover with cold water. Place on medium-high heat and bring to the boil. Once boiling cook for 5-8 minutes, until tender. Drain and return to pot with oil and garlic chilli blend. Season to taste with salt.

While corn cooks combine slaw and spinach in a large bowl. Add half the ranch dressing. Mix well and set aside for serving.

Pick coriander and cut lime into wedges for serving.

Slaw and corn with tofu bites. Drizzle over remaining ranch dressing and sprinkle over coriander. Serve lime wedges on the side for squeezing.
