- 30g grated Parmesan
Pasta
- 200g fresh spaghetti
- 150g frozen peas
Sauce
- 125g bacon, sliced 1cm
- 1 courgette, peeled into ribbons
- 50g baby spinach
- 40g basil pesto
- 1/4 cup lite sour cream

Bring a half full medium pot of hot salted water to the boil with a lid on.

Thinly slice bacon. Heat a dry large fry-pan on high heat and cook bacon for about 5 minutes, until browned. Meanwhile, peel courgette into ribbons and set aside.

Add spinach and courgette to pan and stir to wilt. Add basil pesto and sour cream to pan and stir well and remove from heat. Season to taste with salt and pepper.

Separate pasta strands add to pot of boiling water with peas. Return pot lid and cook for 3-4 minutes, until pasta is tender and peas are bright green. Carefully transfer 1/4 cup of pasta water to sauce and stir through. Drain pasta and peas and add to pan with sauce. Toss to coat pasta in sauce.
