Soft beef tacos that all the family can enjoy
Ingredients
SOFT BEEF TACO MIXTURE
- 1 brown onion, finely diced
- 2 teaspoons taco spice mix
- 450g beef mince
- 1 carrot, grated
- 1 can chopped tomatoes
- ½ cup beef, chicken or vegetable stock
- ½ teaspoon balsamic vinegar
- ¼ teaspoon salt
- 1 can mild chilli beans
TO SERVE
- 10 wholemeal tortilla wraps
- 1 avocado
- 1 baby cos lettuce
- 1 tomato
CHIPOTLE SOUR CREAM
- 125g sour cream
- 2–3 teaspoons chipotle sauce (optional, adults)

oven to 180°C.

Heat a drizzle of olive oil in a large fry-pan on medium-high heat. Cook onion for 3–4 minutes, until softened. Add taco spice mix, beef mince and carrot. Cook for 3–4 minutes, breaking up mince with a wooden spoon, until browned and cooked through.

Add canned tomatoes, stock, balsamic vinegar, salt and chilli beans and simmer for 5–8 minutes, until sauce has thickened.

While mince is simmering, wrap stack of tortillas in foil and warm in oven for about 5 minutes. Thinly slice avocado flesh; finely slice lettuce; dice tomato 1cm.

In a small bowl, mix sour cream with chipotle sauce (if using).

Divide tortillas between plates and fill with beef mixture, avocado, lettuce, tomato and a dollop of chipotle sour cream. Roll up and enjoy.
