Shepherd's Pie with Crispy Potato Topping

For those that want a bit of spice to this meal, add a pinch of chilli flakes into the lamb filling.


Ingredients

CRISPY POTATO TOPPING

  • 600g potatoes, peeled and cut into 2–3cm pieces
  • 1 tablespoon butter
  • 2 tablespoons milk

FILLING

  • 1–2 tablespoons olive oil
  • 450g lamb mince
  • 1 brown onion, finely diced
  • 2 carrots, grated
  • 3 tablespoons tomato paste
  • 1 cup GF beef, chicken or vegetable stock
  • 1 tablespoon GF Worcestershire sauce or GF soy sauce
  • 1 tablespoon chopped thyme leaves
  • 1 tablespoon chopped rosemary leaves
  • 1 cup frozen peas, defrosted

STEAMED GREENS

  • 1 head broccoli
  • 150g green beans
  • 1 tablespoon butter

Steps

  1. oven to 220°C. Set aside an oven-proof dish (approx. 23x30cm). Bring a large pot of salted water to the boil.
  2. Cook potatoes in boiling water for 12–15 minutes until very soft.
  3. Heat oil in a large fry-pan on medium-high heat. Cook mince for 5–6 minutes, until brown and remove from pan.Keep pan on heat and cook onion and carrots for a further 3–4 minutes, until soft.
  4. Add mince back to pan with tomato paste, stock, Worcestershire/soy sauce and herbs. Simmer for 4–5 minutes until thick. Mix through peas and season. Drain potatoes and mash with butter and milk. Season to taste with salt and pepper.
  5. Pour filling into oven-proof dish and evenly spoon over mashed potato. Bake for about 15 minutes, until potato top is crispy.
  6. While pie is cooking, bring a medium pot of salted water to the boil. Cut broccoli into florets and trim ends off beans. When pie has 3 minutes remaining, cook broccoli and beans in pot of boiling water for 1–2 minutes, until bright green and tender. Toss with butter and season with salt and pepper.
  7. Cut Shepherd’s pie into portions and spoon onto plates. Serve steamed greens on the side.
