This Middle Eastern-inspired chicken and falafel salad is light but it's definitely not lacking in flavour. Plus you can build this delicious salad in only 15 minutes! We make it easy for you, by providing all the key components, including tender free range chicken tenderloins, premade falafel and two tasty sauces!
Ingredients
Chicken & falafel
- 600g falafel
- 1 drizzle of olive oil
- 1 drizzle of olive oil
- 1 pack mild shawarma spices
- 600g free range chicken tenderloins
To serve
- 1 pack beetroot hummus
- 1 pack muhammara
- 100g yoghurt
Salad
- 1 pack cherry tomatoes
- 100g baby leaf lettuce
- 1 telegraph cucumber, cut in half & thinly sliced on an angle

Pat chicken dry, place in a bowl with mild shawarma spices, season with salt and pepper and toss to coat. Heat oil in a large fry-pan on medium-high heat. Cook chicken for 3-4 minutes each side, until golden and cooked through.

Heat oil in a second large fry-pan on medium-high heat. Cook falafel for 2-3 minutes, until starting to colour. Flip falafel, and cook for 2-3 minutes further, until golden and hot through.

Cut cucumber in half lengthways and thinly slice. In a small bowl, combine yoghurt and muhammara.

Serve lettuce, topped with cucumber, cherry tomatoes, chicken and falafel. Dollop over muhammara yoghurt and hummus.
