BBQ Glazed Chicken Drums with Creamy Potato Salad

BBQ glazed chicken drums, creamy potato salad, served with fresh crunchy salad. A quick and easy meal for the whole family!


Ingredients

Salad

  • 1 Tbsp vinegar
  • 1 drizzle of olive oil
  • 1 lettuce, roughly chopped
  • 3 tomato, diced 2cm
  • 1 telegraph cucumber, cut in half lengthways & thinly sliced

Potato Salad

  • 1200g potatoes, diced 3cm
  • 125g lite sour cream
  • 1/4 cup mayonnaise
  • 1 Tbsp Dijon mustard

Chicken

  • 1800g free range chicken drumsticks
  • 1 drizzle of oil
  • 200g BBQ sauce

Steps

  1. Preheat oven to 220°C (or 200°C fan bake). Preheat BBQ to medium-high (if using).
  2. Pat chicken dry and toss with oil on a lined oven tray (with a lip). Season with salt and pepper and roast for about 30-35 minutes, until cooked through. Turn once during cooking. Alternatively, cook on the BBQ grill (see tip).
  3. Dice potatoes, add to a large pot and cover with hot tap water. Cook for 20-25 minutes on high heat with the lid on, until just tender. Drain and return to pot. Add all remaining potato salad ingredients to pot. Gently mix to combine and season to taste with salt and pepper.
  4. Chop lettuce, dice tomato and slice cucumber. Add veggies to a large bowl and toss with olive oil and vinegar. Season to taste with salt and pepper.
  5. When chicken has had 35 minutes cook time, remove from oven and toss BBQ sauce on the tray. Switch oven to high grill and grill chicken for 2-3 minutes. Turn chicken and grill a further 2-3 minutes, until golden.
  6. Potato salad with chicken and salad on the side.
