Crispy Corn Fritters & Bacon Salad with Sour Cream

This crisp salad with corn fritters and bacon combines sweet flavours, crunchy textures, and with toppings like sour cream and sweet chilli sauce, your taste buds will be rocking!


Ingredients

To Serve

  • 2 Tbsp sweet chilli sauce
  • 125g lite sour cream

Fritters

  • 1 cup plain flour
  • 250g frozen corn
  • 50g baby spinach, chopped
  • 1 capsicum, diced
  • 1 brown onion, diced
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/4 cup milk
  • 1 pack eggs (4 pack)
  • 1 drizzle of oil

Bacon Salad

  • 2 tsp vinegar
  • 1 drizzle of olive oil
  • 1 lettuce, chopped
  • 1 telegraph cucumber, cut in half lengthways & thinly sliced
  • 300g shoulder bacon, diced 1cm

Steps

  1. Preheat oven to 220°C (or 200°C fan bake). Preheat BBQ hot plate to medium-high, if using.
  2. Dice bacon and spread evenly on a lined oven tray. Bake for 12-15 minutes, or until crispy and golden. Turn halfway through cook time. Set aside to cool. Alternatively, cook bacon using same method on BBQ hot plate.
  3. Dice onion, capsicum and chop spinach. Add to a large bowl with all remaining fritter ingredients (except oil). Season with pepper and mix well to combine.
  4. Heat oil in a large, non-stick fry-pan on medium heat. Dollop heaped tablespoon amounts of corn fritter mix into pan and cook, in batches, for 3-4 minutes each side, until golden and cooked through. Season with salt and pepper. Set aside, covered to keep warm between batches. Alternatively, cook fritters using same method on BBQ hot plate.
  5. Cut cucumber in half lengthways and thinly slice, chop lettuce and add to a medium bowl with bacon, olive oil and vinegar. Toss to combine. Season to taste with salt and pepper.
  6. Fritters topped with bacon salad, sour cream and sweet chilli sauce.
