Cheesy Tuscan Beef Gnocchi

Our Cheesy Tuscan Beef Gnocchi is a quick and easy meal the whole family will enjoy. Our recipe features beef, roasted capsicums and spinach, with flavourful Tuscan spices in a tomato sauce all topped with Parmesan cheese.


Ingredients

Gnocchi

  • 30g grated Parmesan
  • 250g gnocchi

White Sauce

  • 3/4 cup milk
  • 1 Tbsp plain flour
  • 1 Tbsp butter
  • 100g baby spinach, roughly chopped

Beef

  • 1 can crushed tomatoes
  • 1/2 pack tuscan stock blend
  • 1/4 tsp salt
  • 300g beef mince
  • 1 drizzle of oil
  • 1 capsicum, thinly sliced
  • 1 carrot, grated

Steps

  1. Bring a medium pot of salted water to the boil. Preheat oven to high grill. If you don't have an oven-proof fry-pan, set aside a large baking dish.
  2. Grate carrot, thinly slice capsicum and chop spinach.
  3. Heat oil in a large oven-proof fry-pan on high heat. Cook beef, carrot and salt for 5 minutes, until browned. Add Tuscan stock blend and cook a further 2 minutes, until fragrant. Add canned tomatoes and capsicum, bring to a simmer and cook for about 4 minutes, until thickened and reduced. Season to taste with salt and pepper.
  4. Melt butter in a small pot on medium heat. Whisk in flour and cook for 2 minutes, until sandy in texture. Whisk in milk, 1/2 cup at a time, until smooth. Cook, stirring for a further 2 minutes, until thickened. Remove from heat, stir through spinach and season to taste with salt and pepper.
  5. Cook gnocchi in pot of boiling water for about 3 minutes, until tender. Drain and gently stir through beef. Transfer to baking dish, if using.
  6. Pour white sauce over beef and sprinkle with cheese. Grill on upper oven rack for about 5 minutes, until golden.
  7. Gnocchi.
