Crispy Crumbed Popcorn Pork Tacos with Charred Corn Slaw & Katsu Sauce

Ingredients

Tortillas

  • 1 pack tortillas

Pork

  • 1 drizzle of oil
  • 1 egg
  • 1 Tbsp cornflour
  • 1/4 tsp salt
  • 1 pack Asian herbs
  • 300g free farmed pork scotch steaks, diced 2cm
  • 50g breadcrumbs

To Serve

  • 50g katsu sauce

Corn Slaw

  • 1 tsp vinegar
  • 2 Tbsp mayonnaise
  • 150g slaw
  • 150g frozen corn
  • 1 drizzle of oil

Steps

  1. Preheat oven to 200°C (or 180°C fan bake), if using to warm tortillas.
  2. Heat oil in a large fry-pan on medium-high heat and cook corn for about 8 minutes, until charred. Set aside in a large bowl. Reserve pan.
  3. Pat pork dry and dice 2cm. Add to a medium bowl with Asian herbs, salt and cornflour and toss to coat. Whisk egg in a small bowl, then add to bowl with pork and toss to coat. Place breadcrumbs in a second bowl. Place handfuls of pork into the breadcrumbs and turn to coat.
  4. Heat oil in reserved-pan on medium-high heat. Cook pork for about 10-12 minutes, until golden on all sides and cooked through. Add more oil as needed (see tip).
  5. Place stack of tortillas on a plate. Cover with another plate and microwave for about 1 minute, until hot through. Alternatively, wrap in foil and warm in oven for about 8 minutes.
  6. Add slaw, mayonnaise and vinegar to bowl with corn. Toss to combine and season with salt and pepper.
  7. Tortillas filled with slaw, pork and katsu sauce.
