Bacon and Kumara Cakes with Apple Salad

These tasty cakes will be a hit with the whole family


Ingredients

BACON AND KUMARA CAKES

  • 500g orange kumara, scrubbed
  • 2 teaspoons runny honey or GF maple syrup
  • 250g streaky bacon, sliced 1cm
  • ¾ red onion, finely diced (reserve ¼ for salad)
  • 4 eggs
  • ½ cup GF flour
  • ½ teaspoon salt
  • ½ cup grated Colby cheese

APPLE SALAD

  • 2 tablespoons GF mayonnaise
  • 1 tablespoon GF mild sweet chilli sauce (optional, adults)
  • ½ teaspoon GF mustard (e.g. Dijon, wholegrain)
  • ½ teaspoon GF vinegar (e.g. white wine, red wine, cider)
  • ¼ red onion, finely diced (optional, adults)
  • ½ telegraph cucumber, diced 1–2cm
  • 1 apple, core removed, diced 1–2cm
  • ½ bag baby spinach leaves, roughly chopped

TO SERVE

  • 2 tablespoons GF mild sweet chilli sauce (optional)

Steps

  1. oven to 220°C. Line an oven tray with baking paper.
  2. Dice kumara 1cm until you have 3 heaped cups worth. Toss with honey/maple syrup and a drizzle of oil on prepared tray and season with salt and pepper. Roast for about 10 minutes, or until just tender. Remove from oven and reduce temperature to 150ᵒC (to keep cakes warm).
  3. While kumara is cooking, heat a large fry-pan on medium-high heat. Cook bacon for about 4 minutes until starting to brown. Add onion and cook for a further 3 minutes or until onion is soft and bacon is crispy.
  4. While bacon and onion cook, whisk eggs, flour and salt in a large bowl until smooth. Fold through cheese, roasted kumara, bacon and onion and season with pepper. Return empty tray to oven (to keep cakes warm).
  5. Wipe out pan used for bacon and heat a drizzle of oil on low-medium heat. Use a ¼ cup measure to scoop out mixture and cook cakes, in batches, for about 2 minutes each side until golden and cooked through. Place on preheated tray and keep cakes warm in oven.
  6. In a large bowl, mix together mayonnaise, sweet chilli sauce (if using), mustard, vinegar and onion (if using). Add all remaining salad ingredients and toss to combine.
  7. Place 2–3 bacon and kumara cakes onto each plate and serve apple salad on the side. Drizzle a little sweet chilli sauce over cakes, if desired.
