
Sesame Chicken and Crunchy Noodle Stir-Fry

Crunchy noodles make for a fun family meal!
Ingredients
SESAME CHICKEN
- 550g chicken thighs
- 3 tablespoons hoisin sauce
- 2 teaspoons sesame seeds
CRUNCHY NOODLE STIR-FRY
- 2 baby bok choy, ends trimmed 1cm
- 1 carrot, peeled
- 150g mung bean sprouts
- 400g crispy noodles
NOODLE DRESSING
- 1 tablespoon sweet chilli sauce
- 2 teaspoons sesame oil
- 1 tablespoon Worcestershire sauce

oven to 230°C. Line an oven tray with baking paper

Pat chicken dry with paper towels and slice into 1.5cm-thick strips. Toss on prepared tray with sauce and sprinkle over sesame seeds. Bake for 10–12 minutes until chicken is cooked through and sauce is sticky.

While chicken is cooking, prepare noodle stir-fry. Cut bok choy and carrot in half lengthways then thinly slice. Set aside.

Mix all noodle dressing ingredients in a small bowl and set aside.

Heat a drizzle of oil in a large fry-pan or wok on high heat. Stir-fry carrot and bok choy for 3–5 minutes until tender. Add mung beans and dressing and toss to coat.

Add cooked chicken and any sauce from tray to pan with crispy noodles and toss to combine.

Divide sesame chicken with crunchy noodle stir-fry between bowls.
