BBQ Glazed Chicken Nibbles with Greek Salad & Garlicky Roasties

Try out these finger lickin' good chicken nibbles! Glazed with smoky and tangy BBQ sauce paired with greek salad and roasties for balance - this is a great summer meal to have for dinner!
Ingredients
Salad
- 1 drizzle of olive oil
- 2 tsp vinegar
- 100g feta cheese, crumbled
- 1 telegraph cucumber, thinly sliced
- 1 lettuce, roughly chopped
- 2 tomato, diced 2cm
Potatoes
- 800g potatoes, diced 2cm
- 1 pack garlic salt
- 1 drizzle of oil
Chicken
- 1000g free range chicken nibbles
- 1 drizzle of oil
- 100g BBQ sauce

Preheat oven to 220°C (or 200°C fan bake). Preheat BBQ to medium-high (if using).

Pat chicken dry and toss with oil on a lined oven tray. Season with salt and pepper and roast for about 35 minutes, until cooked through. Turn once during cooking.

Dice potatoes and toss on second lined oven tray with oil and garlic salt. Season with pepper and on lower rack, roast for about 30 minutes, until golden and tender.

Chop lettuce, dice tomato, slice cucumber, and tomato. Add veggies to a large bowl and toss with olive oil and vinegar. Crumble over feta.

When chicken has had 35 minutes cook time, remove from oven and toss BBQ sauce on the tray. Switch oven to high grill and grill chicken for 2-3 minutes. Turn chicken and grill a further 2-3 minutes, until golden. Alternatively, cook chicken on BBQ (see tip).
