Lamb Pasta Bake with Courgette Crumble and Broccoli Salad

The courgette crumble is a great topping to mix up a traditional dish!
Ingredients
LAMB PASTA BAKE
- 200g penette rigate pasta
- 1/2 brown onion, finely diced or grated
- 1 clove garlic, finely chopped
- 1 clove garlic, finely chopped
- 300g lamb mince
- 1 tablespoon tomato paste
- 1 carton chopped tomatoes
- 1/4 cup red wine (or beef stock)
- 1 1/2 teaspoons Worcestershire sauce
- 1 teaspoon lamb herb spice mix
- 1/2 teaspoon sugar
COURGETTE CRUMBLE
- 1 courgette, grated
- 1/4 cup grated mozzarella cheese
- 1/2 cup panko breadcrumbs
- 1 teaspoon lamb crumble spice mix
- 1 teaspoon olive oil
BROCCOLI
- 1 head broccoli
TO SERVE
- 20g cranberry and almond mix

a medium pot of salted water to the boil. Preheat grill to high. Bring a small pot of salted water to the boil.

Cook pasta in medium pot of boiling water for 8–10 minutes until just tender. Drain and drizzle with olive oil to prevent sticking. Return to pot and set aside.

Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion, garlic and carrot for 3–4 minutes until soft. Add mince and cook for 4–5 minutes, until browned, breaking up with a wooden spoon as it cooks. Add tomato paste, tomatoes, wine/ stock, Worcestershire sauce, spice mix and sugar.

Simmer, stirring occasionally, on medium heat until slightly reduced, about 5 minutes. Season with salt and pepper. While lamb is simmering, place all courgette crumble ingredients in a bowl and mix well.

Add mince mixture to pot with cooked pasta and mix well until combined. Pour into a baking dish and sprinkle over courgette crumble. Grill for 4–5 minutes until crumble is golden.

While lamb pasta bake is grilling, cut broccoli into small florets. Add to small pot of boiling water and cook for 2–3 minutes until bright green and tender. Drain and season with salt and pepper.

Spoon lamb pasta bake onto plates. Serve broccoli on the side with a sprinkle of cranberry and almond mix.
