Herby Garlic Beef Sirloin Steaks with Creamy Bacon & Kumara Salad

These succulent beef steaks will steal the stage at your dinner table. Marinated in a herby garlic sauce prepared by our friends at Loft, prepare yourself for some serious flavour that will have you asking for seconds!
Ingredients
Salad
- 1 baby cos lettuce, roughly chopped
- 1 Lebanese cucumber, cut in half lengthways & thinly sliced
- 1/2 pack chopped walnuts
- 1 drizzle of olive oil
- 1/2 Tbsp vinegar
Beef
- 1 pack herby garlic marinade
- 1 drizzle of oil
- 300g beef sirloin steaks
Kumara Salad
- 4 Tbsp lite sour cream
- 400g kumara, diced 2cm
- 1 carrot, diced 2cm
- 1 drizzle of oil
- 50g minced bacon
- 1 spring onion, thinly sliced

Preheat BBQ hotplate to medium-high (if using).

Dice kumara and carrot. Add to a medium pot and cover with hot water and a pinch of salt. Cook on high heat for 15-20 minutes, until tender. Rinse with cold water to cool, before draining well.

Cook bacon on BBQ hotplate for about 5 minutes, until cooked through and brown and set aside in a large bowl. Alternatively, use same method with a medium fry-pan and reserve pan.

Pat beef dry and season with salt and pepper. Oil BBQ hotplate, if using. Cook beef for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Add herby garlic marinade for last minute of cook time and toss to coat. Rest, covered, before slicing thinly. Alternatively, use same method with reserved fry-pan.

Roughly chop lettuce and cut cucumber in half lengthways before thinly slicing. Combine all salad ingredients in a large bowl and season to taste with salt and pepper.

Thinly slice spring onion. Add drained kumara to bowl with bacon, along with sour cream and spring onion. Toss together and season to taste with salt and pepper.

Beef with creamy kumara and salad on the side.
