We're taking you on a super quick trip to Vietnam with this dish. Diced chicken breast, a fragrant ready-made Vietnamese paste and pre-cooked brown rice and quinoa allow you to be at the table and eating, within just 15 minutes!
Ingredients
Chicken
- 1 drizzle of oil
- 300g diced free range chicken breast
- 1/2 pack Vietnamese paste
- 1 tsp fish sauce
Salad
- 1 Lebanese cucumber, cut in half & thinly sliced
- 150g slaw
- 50g mung bean sprouts
Rice
- 1 pack brown rice & quinoa
To Serve
- 1 bunch mint, leaves picked
- 50g nuoc cham
Steps

Heat oil in a medium fry-pan on medium-high heat. Add chicken, Vietnamese paste and fish sauce and cook for about 5 minutes, until cooked through. Rest, covered.

Cut cucumber in half and slice and toss in a medium bowl with slaw and mung beans sprouts. Season to taste with salt and set aside for serving.

Tear top from rice and microwave for 2 minutes, or until hot.

Pick mint leaves.

Rice topped with chicken, salad, nuoc cham and mint.
