Best Ever Pork Sausie Rolls with Walnut Salad

These pork sausie rolls with a fresh walnut salad are the perfect comfort food that cannot be passed up! This recipe is easy to prepare using all butter puff pastry and a delicious pork grind from our friends at L'authentique.


Ingredients

Sausage Rolls

  • 1 Tbsp milk
  • 250g flaky puff pastry, cut in half lengthways
  • 25g breadcrumbs
  • 300g classic pork grind
  • 1/4 tsp salt
  • 1 drizzle of oil
  • 1/2 apple, grated
  • 1 carrot, grated
  • 1/2 brown onion, finely diced

Vinaigrette

  • 1/2 Tbsp wholegrain mustard
  • 2 Tbsp extra-virgin olive oil
  • 1/2 Tbsp balsamic vinegar
  • 1/2 pack chopped walnuts

Salad

  • 1 Lebanese cucumber, diced 1cm
  • 1 baby cos lettuce, roughly chopped
  • 1 tomato, diced 1cm

To Serve

  • 3 Tbsp tomato sauce

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Prep onion, carrot and apple. Heat oil in large fry-pan on medium-high heat. Cook onion and carrot with salt for 3-4 minutes, until starting to soften. Add to a large bowl with apple, pork and breadcrumbs. Mix well and reserve pan.
  3. Unroll pastry on to a flat surface. Shape filling into a long sausage along centre of the pastry. Roll up pastry to form a long sausage roll. Cut into 6 even sized pieces and place on a lined oven tray, seam side down.
  4. Brush milk over sausage rolls. Bake for 18-22 minutes, or until pastry is puffed and golden and pork is cooked through.
  5. Heat a medium, dry fry-pan on medium heat. Toast walnuts, stirring often for 2-3 minutes, until golden and fragrant. Transfer to a medium bowl and reserve pan. Add remaining vinaigrette ingredients to bowl, whisk and season to taste with salt and pepper. Set aside for serving.
  6. Prep lettuce, cucumber and tomato and set aside in a large bowl. Just before, serving toss with vinaigrette.
  7. Sausage rolls with tomato sauce and salad on the side.
