Teriyaki Tofu Donburi Bowl

This is so easy and healthy, the tofu finishes in Teriyaki sauce to make it super tasty with fresh cucumber, avocado and edamame beans!
Ingredients
Toppings
- 1 pack shredded nori
- 2 avocado, thinly sliced
- 1 telegraph cucumber, cut in half lengthways & thinly sliced
- 1 pack edamame beans
Mayo (optional)
- 1 1/2 tsp sesame oil
- 3 Tbsp mayonnaise
Rice
- 3 1/4 cup boiling water
- 450g short grain rice
Tofu
- 200g teriyaki sauce
- 1 drizzle of oil
- 3 Tbsp cornflour
- 3 pack tofu, diced 2cm

Bring a full kettle to the boil.

Combine rice, boiling water measure and a pinch of salt in a medium pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.

Place edamame in a heat-proof bowl and cover with boiling water. Cover and leave to cook for about 6 minutes. Drain and season with salt.

Cut cucumber in half lengthways and thinly slice. Thinly slice avocado and set them aside to serve.

In a small bowl, mix mayo and sesame oil. Set aside to serve.

Pat tofu dry and dice into 2cm cubes. Add to a medium bowl, gently toss together with cornflour, until well coated. Season lightly with salt and pepper. Heat oil in a large fry-pan on high heat and cook tofu for about 8-10 minutes turning often, until golden. Add teriyaki sauce and cook for about 2 minutes, until slightly reduced and sticky.

Rice topped with edamame, tofu, cucumber, avocado, nori and a dollop of mayo.
