Thai Beef Salad with Soy, Ginger & Lemon Dressing

Thai Style Beef Salad (and the dressing that goes with it) is a flavour bomb of freshness and healthiness that will leave you feeling light and revitalised.


Ingredients

Beef

  • 1 drizzle of oil
  • 1 pack Thai Spices
  • 900g beef stir-fry
  • 1 1/2 Tbsp ginger, minced (optional)

Salad

  • 1 twin pack baby cos lettuce, roughly chopped
  • 2 tomato, diced
  • 1 pack crispy shallots
  • 1 telegraph cucumber, cut in half lengthways & thinly sliced

Dressing

  • 2 Tbsp sweet chilli sauce
  • 2 tsp fish sauce, optional
  • 2 Tbsp soy sauce
  • 1 lemon, juiced
  • 2 tsp ginger, minced (optional)

Rice

  • 3 1/4 cup boiling water
  • 450g jasmine rice

Steps

  1. Bring a full kettle to the boil.
  2. Combine rice, boiling water measure and a pinch of salt in a medium pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.
  3. Mince first measure of ginger and juice lemon. In a small bowl, mix all dressing ingredients and set aside.
  4. Chop lettuce, dice tomato and slice cucumber. In a large bowl, mix all salad ingredients with the dressing. Season to taste with salt and pepper. Set aside to serve.
  5. Mince second measure of ginger. Pat beef dry and toss with ginger and Thai spices in a medium bowl. Season with salt and pepper. Heat oil in a large fry-pan on high heat (see tips) and cook beef for 2 minutes, until browned.
  6. Salad topped with beef stir-fry. Serve rice on the side.
