Southern Pork Sirloin Steaks with Quinoa & Jalapeno Creme

These delicious pork steaks are perfectly seasoned in smoky fennel spices to be the star of an easy weeknight meal! Served up with red quinoa and smoky jalapeno creme!
Ingredients
Pork
- 1/2 tsp oil
- 1/2 pack smoky fennel spices
- 275g free farmed pork sirloin steaks
To Serve
- 2 Tbsp smoked jalapeño crème
- 30g feta cheese, crumbled
Quinoa
- 1/2 pack quinoa
- 1 Tbsp white wine vinegar
- 50g baby spinach
- 1 tomato, diced
- 1 Lebanese cucumber, diced 2cm
- 1/2 cup frozen corn
Steps

Bring a medium pot of salted water to the boil. Preheat BBQ grill to medium-high (if using).

Add quinoa to pot of boiling water and cook for about 15 minutes. After 15 minutes, add corn and cook for 2 more minutes, until quinoa and corn are tender. Drain well.

Pat pork dry and season with salt. Coat in smoky fennel spices. Heat oil in a medium fry-pan on medium heat. Cook pork for 3-4 minutes each side, or until just cooked through. Alternatively, cook pork on BBQ. Rest, covered, before slicing thinly. Reserve resting juices.

Dice cucumber and halve tomatoes. Combine in a medium bowl with cooked quinoa, baby spinach and vinegar. Season to taste with salt and pepper. Crumble feta and set aside for serving.
