Courgette and Cheese Crusted Lamb with Roasted Potatoes

Lamb with a cheesy courgette crust!


Ingredients

ROASTED POTATOES

  • 600g potatoes, scrubbed and diced 2cm
  • 1 red onion, cut in half and sliced 1cm
  • 1 carrot, cut in half lengthways and thinly sliced
  • 1 tablespoon olive oil
  • 1/2 bag baby spinach leaves
  • 2 teaspoons balsamic vinegar (optional, adults)

COURGETTE AND CHEESE CRUSTED LAMB

  • 1 tablespoon olive oil
  • 550g butterflied lamb leg (at room temperature)
  • 1 courgette, grated
  • 2 teaspoons olive oil
  • 3/4 cup panko breadcrumbs
  • 1/2 cup grated Colby cheese
  • 1 tablespoon Dijon mustard

Steps

  1. oven to 230°C. Line two oven trays with baking paper.
  2. Toss potato, onion and carrot on first prepared tray with oil. Season with salt and pepper and roast for about 25 minutes, or until potatoes are tender and onion is just starting to caramelise. Turn once during cooking. Remove tray from oven and toss spinach leaves and balsamic vinegar (if using) on tray with roasted potatoes.
  3. Heat oil in a large fry-pan on high heat. Pat lamb dry with paper towels and season with salt and pepper. Sear lamb for 3 minutes each side, until lamb is golden (lamb does not need to be fully cooked through). Place lamb on second prepared tray and set aside.
  4. In a bowl, combine all remaining courgette and cheese crusted lamb ingredients (except mustard) and season with salt and pepper. Evenly spread one side of the seared lamb with mustard then top with courgette and cheese crust mix. Gently pat down to adhere.
  5. When potatoes have 15 minutes cook time remaining, roast lamb (on rack higher than potatoes) for about 10 minutes, or until cheese has melted and crust is golden. Check regularly to avoid burning. Set aside to rest for 5 minutes.
  6. When lamb has finished resting, slice thickly against the grain.
  7. divide roasted potatoes between plates and top with slices of courgette and cheese crusted lamb.
