Remove film from Spanish lamb and microwave on high for 6-8 minutes, until piping hot. Stir halfway through cook time. Alternatively, place in a medium pot, cover with a lid and cook on medium heat for about 10 minutes, stirring often until very hot.

Bring stock to the boil in a small pot. Once boiling, add couscous and cover with a lid. Remove from heat and leave to steam for 6-8 minutes, until tender. Remove lid and fluff up grains with a fork and fold through spinach.
