Beef Chop Suey with Vermicelli Noodles

Ingredients

Veggies & Beef

  • 1 tsp soy sauce
  • 200g chop suey sauce
  • 600g beef mince
  • 1 drizzle of oil
  • 1 Tbsp ginger, minced
  • 2 garlic clove, minced
  • 2 carrot, grated
  • 1 twin pack baby bok choy, thinly sliced
  • 200g mushrooms, thinly sliced

Noodles

  • 1 drizzle of oil
  • 250g vermicelli noodles, string removed

To Serve

  • 1 spring onion, thinly sliced

Steps

  1. Bring a full kettle to the boil.
  2. Slice mushrooms and bok choy. Grate carrot. Mince garlic and ginger.
  3. Heat oil in a large, deep fry-pan on high heat. Cook garlic, ginger, beef and mushrooms for about 7 minutes, until well browned and cooked through. Add carrot and cook for a further 3 minutes, until softened.
  4. Place noodles in a large heat-proof bowl and cover with boiling water. Use a fork to separate strands, then cover. Leave for 5 minutes, then drain well and toss with oil to prevent sticking. Cut in a few places with kitchen scissors to make them easier to eat.
  5. Add bok choy and chop suey sauce to pan with beef. Cook for about 1 minute, until soft, then remove from heat. Add noodles to pan and mix to combine. Season to taste with soy sauce. Slice spring onion to serve.
  6. Chop suey topped with spring onion.
