Hickory Pulled Pork Tacos with Radish Apple Slaw

Ingredients
HICKORY PULLED PORK
- 1/2 red onion, finely diced
- 1/2 apple, grated
- 2 tablespoons American hickory sauce
- 250g pulled pork
- 2 teaspoons sweet chilli sauce
- 1/2 teaspoon cornflour mixed with 1/4 cup water
RADISH APPLE SLAW
- 1 tablespoon sour cream
- 2–3 teaspoons lemon juice
- 1/2 red onion
- 3 radishes
- 1/2 apple
- 1 carrot
TO SERVE
- 6 tortilla wraps
- 2 tablespoons coriander leaves, roughly torn
- 1/4 cup sour cream
Steps

oven to 180°C (to warm tortillas).

Heat a drizzle of olive oil in a pot on low-medium heat, fry onion for 3 minutes until soft, add apple and cook for a further 2 minutes.

Add American hickory sauce, pork, sweet chilli sauce and water/cornflour mix. Reduce heat to low and simmer for 3–5 minutes or until the sauce thickens, stirring regularly to avoid burning. Season with salt and pepper. Keep warm.

While pork cooks make the slaw; in a bowl whisk sour cream and lemon juice together until smooth; thinly slice onion and radish; cut apple into thin slices then into matchsticks; peel carrot into ribbons and cut into matchsticks, or grate.

Add slaw ingredients to the bowl containing sour cream and lemon mixture, toss to coat.

Wrap all tortillas in foil and warm in oven for 5 minutes.

place warmed tortillas on a flat surface, top with radish apple slaw and Hickory pulled pork, sprinkle over coriander and a dollop of sour cream, roll up and enjoy!
