Asian Corn Omelette with Crispy Noodles

Ingredients

ASIAN CORN OMELETTE

  • 1/2 can corn kernels, drained
  • 1 chilli, de-seeded
  • 1 spring onion
  • 3 tablespoons coriander, stalks chopped (reserve leaves for garnish)
  • 1 tablespoon ginger, minced
  • 6 eggs
  • 1/4 cup milk
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

SALAD

  • 1 baby bok choy, rinsed, end trimmed 1cm
  • 1 pack radishes
  • 1 spring onion
  • 100g mung bean sprouts
  • 1/2 can corn kernels, drained
  • 10g sesame seeds
  • 2 teaspoons rice wine vinegar
  • 2 teaspoons sesame oil

DRESSING

  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sweet chilli sauce
  • Juice of 1/2 lemon

TO SERVE

  • 100g crispy noodles
  • Reserved coriander leaves
  • 1/2 chilli, finely diced (optional)
  • 1/2 lemon, cut into wedges

Steps

  1. oven to 200°C
  2. Finely chop first measure of corn, chilli, spring onion and coriander stalks. Whisk in a bowl with remaining Asian corn omelette ingredients.
  3. Heat a drizzle of oil in a large oven-proof pan on medium-high heat. Add whisked omelette ingredients and cook for 2–3 minutes or until beginning to set. Transfer to oven for 5–6 minutes or until just set.
  4. While omelette cooks prepare salad. Finely slice baby bok choy; finely slice radish into rounds until you have 3/4 cup worth; slice spring onion on an angle and mix in medium bowl with remaining salad ingredients.
  5. Mix all dressing ingredients in another bowl and set aside.
  6. When omelette is ready, use a knife to loosen around edges and slide out onto a chopping board. Cut into 6 triangles.
  7. place a piece of Asian corn omelette onto plates, top with salad, crispy noodles, reserved coriander leaves and a drizzle of dressing. Sprinkle with chilli if desired and a wedge of lemon on the side.
