Beef & Cheeseburger Pasta Bake with Pickle Sour Cream

Ingredients
To Serve
- 1 carrot, peeled into ribbons
- 1 capsicum, diced
- 1 twin pack baby cos lettuce, shredded
Pickle Sour Cream
- 100g gherkins, chopped
- 125g lite sour cream
- 1 pack dill spices
- 1 tsp vinegar
- 3 Tbsp mayonnaise
Beef
- 1/2 cup beef stock
- 1 Tbsp Worcestershire sauce
- 1 can crushed tomatoes
- 60g tomato paste
- 2 pack BBQ Spices
- 1/2 tsp salt
- 600g beef mince
- 1 drizzle of oil
- 90g cheese, grated
- 1 carrot, grated
Pasta
- 2/3 pack macaroni
- 1 drizzle of olive oil
Steps

Bring a large pot of hot salted tap water to the boil (with a lid). Preheat oven to grill. Set aside a large baking dish.

Grate carrot and cheese. Shred lettuce, dice capsicum and peel carrot into ribbons. Set all aside separately.

Add pasta to pot of boiling water and cook for 8-10 minutes, until just tender. Drain well and return to pot with a drizzle of oil to prevent sticking.

Heat oil in a large fry-pan on medium-high heat. Add carrot to pan and cook for about 3 minutes, until tender. Add beef, salt and cook for a further 5 minutes using a wooden spoon to break up mince. Add BBQ spices and tomato paste and cook for about 1-2 minutes, until fragrant.

Add canned tomatoes, Worcestershire sauce and stock to pan with beef. Bring to a boil and simmer for about 5 minutes, until thickened. Season to taste with salt and pepper. Transfer beef sauce and cooked pasta into pre-pared baking dish and mix gently. Sprinkle over cheese. Grill in oven for about 3 minutes, until cheese is melted and golden.

Chop gherkins and place in a small bowl along with sour cream, ranch spices, mayo and vinegar. Mix well and season to taste with salt.

Cheeseburger pasta bake with capsicum, lettuce and carrot on the side. Drizzle over pickle sour cream.
